Cottage Cheese Pancakes, 2 Ways.

We love cottage cheese pancakes for the salty bits of cheese that melt throughout the fluffy pancake but also for the protein boost. If you are skeptical about cottage cheese, I will say that this is a great place to give it a try to avoid texture concerns. Pancakes are my favorite vehicle for introducing new foods to kids and adults. These are staple recipes for my family that we enjoy almost every week.

Blueberry:

  • 4 eggs

  • 1c cottage cheese

  • 1/2tsp vanilla extract

  • 1TB honey

  • 3/4c blueberries

  • 1c gf flour

  • 2tsp baking powder

Meyer lemon:

  • 4 eggs 

  • 1c cottage cheese

  • 1tsp vanilla extract

  • 2TB sugar (panela, coconut or cane)

  • Zest of 2 Meyer lemons (or 1 regular lemon)

  • Juice of 1 Meyer lemon (or regular lemon)

  • 1c gf flour

  • 1/4 c tapioca flour

  • 2tsp baking powder 

Directions:

Mix all ingredients together until well combined. Pan fry pancakes in butter or fat of choice until cooked through.
